Coconut trees produces many basic food products and non-food raw materials for high value products. The coconut provides a nutritious source of meat, juice, milk, and oil. It is highly nutritious and rich in fiber, vitamins, and minerals. It is classified as a “functional food” because it provides many health benefits beyond its nutritional content. In this recipe, we will show you how to make healthy and delicious noodles using coconut.
Coco-Noodles Processing
Ingredients in Making Coco-Noodles:
- 850 grams Bread Flour
- 150 grams Coco Flour
- 30 grams Salt
- 1 pc Whole Egg, well beaten
- 3 grams Kansui
- Few drops of Yellow food color (optional)
- 320 grams Water
Procedure for manual cutting of noodles
Note: This product is ideal for lomi-like pancit preparation.
- Dilute kansui and salt separately with prepared water.
- Mix very well the bread flour and coco flour in a bowl.
- Gradually add kansui solution in a stream-like manner.
- Gradually add salt solution in a stream-like manner.
- Add water according to desired consistency.
- Knead on a floured clean and smooth surface until gluten is developed or until very elastic.
- Divide dough in ten pieces and knead into thin flat sheets.
- Using a pair of sharp scissors, cut into desired strips.
- Dust with flour to prevent these from sticking together.
- Weighing noodles (150 grams each)
- Blanch in boiling water.
- Immerse in cold water then drain well.
- Deep oil-frying using a round molder.
